- 1 lb yellow potatoes yellow finn or butter as best
- 1/3 cup fresh parsley, chopped leaves only
- salt to taste
- 1 tsp butter optional
- 1 Tbsp Salute Santé! Grapeseed Oil
- Prepare potatoes. Cut any eyes or bruises away. Peel the skin.
- Boil or steam in water until soft. Drain.
- Add grapeseed oil to sauté pan. Heat on medium heat.
- Add potatoes to hot oil - sauté to coat potatoes. Add butter if desired.
- Throw in chopped parsley. Toss with potatoes.
- Serve hot.
