Ingredients

1 cup chanterelle mushrooms
4 eggs, scrambled
2 cups seasonal greens Spinach, Kale, Broccoli Rabe
2 cloves fresh garlic
2-4 Tbsp Salute Santé! Grapeseed Oil
1 tsp whole black peppercorns
1-2 Tbsp Salute Santé! White Truffle Grapeseed Oil
1/4 cup fresh chopped chives
salt to taste

White Truffle Oil

The light fresh taste of grapeseed oil allows for the ultimate flavor explosion of white truffle.
 
Fresh from Italy’s truffle harvest, our white truffle grapeseed oil is loaded with aroma and flavor – perfect for any dish that calls for the delicious addition of white truffle!
 
Drizzle over the final dish to add a boost of delicious white truffle flavor!

Instructions

  1. Prepare ingredients. Chop mushrooms into even 1″ pieces
  2. Wash and chop greens. Chop garlic into thin slices.
  3. Add 1 Tbsp grapeseed oil to medium heat pan.
  4. Throw mushrooms into hot oil. Let sizzle and stir. Create a well and add garlic. Stir to avoid burning. Remove from pan and let sit.
  5. Add 1 Tbsp grapeseed oil to pan. Sauté eggs in hot oil and stir intermittently to remove from the bottom of the pan. Remove from pan and place in dish to stay warm. Drizzle truffle oil at the end to avoid flavor to evaporate.
  6. Add 1 Tbsp grapeseed oil to pan. Add seasonal greens and stir frequently to wilt until tender.
  7. Plate dish – seasonal greens, eggs topped with chanterelles. Sprinkle chopped chives and salt to taste.

Grapeseed oil contains 60-120mg of vitamin E per 100g, making it a significant source of vitamin E and OPC’s. OPC’s are now a well-known antioxidant and studies indicate its potency to be 50 to 80 times stronger than Vitamin E.
